Mini No Bake Death by Chocolate Cheesecake

Valentine’s Day is coming! What is better that an EASY and delicious no-bake dessert to serve to your Valentine?

Kai and I do not love chocolate, but this cheesecake was super delicious!

TIPS TO MAKE MY NO BAKE DEATH BY CHOCOLATE CHEESECAKE

My recipe tester Donna mentioned that the crust was a bit sweet for her liking so if you prefer a more bitter chocolate, you can omit the stevia glycerite to make it less sweet.

You can always add more, you can’t take away. This is a tip that will help you with all aspects of cooking and baking. Taste and add more sweetness if you prefer. Taste the crust and taste the filling before assembling. Since this is a no-bake dessert, there will be no sweetness to be baked off (which happens with natural sweeteners).

HOW TO MAKE MINI NO BAKE DEATH BY CHOCOLATE CHEESECAKE

To make my no-bake Death by Chocolate Cheesecake, I used chocolate Equip prime protein.

Mini No Bake Death by Chocolate Cheesecake

  • Place all the ingredients for the crust into a medium heat-safe bowl. Heat in the microwave in 20 second increments and stir in between, keep heating for 20 seconds each time, until the chocolate is completely melted. Stir to combine everything well, then set in the fridge for 10 minutes so the dough is workable enough to hold shape.

  • Press the crust dough into the bottom and part way up the sides of a 4-inch springform pan. 

  • To make the crust, place the chopped chocolate and butter into a medium heat-safe bowl. Heat in the microwave in 20 second increments and stir in between, keep heating for 20 seconds each time, until the chocolate is completely melted. Set aside.

  • In another medium bowl, place the softened cream cheese, allulose, Equip prime protein and use a hand mixer to combine well. Mix in the melted chocolate until well combined. Add the cream and extract and combine until smooth. Taste and adjust sweetness to your liking.

  • Pour over the cooled crust and place in the fridge for at least 5 hours or overnight to set. 

  • If desired, place the chopped The Good Chocolate into a small bowl and add heavy cream. Heat in the microwave in 15 second increments until completely melted and stir well to combine. Drizzle over the cheesecake.

  • Store extras in an airtight container in the fridge for up to 7 days.
