If you’re a fan of Danish pastries, you’re going to love this keto version. The flaky crust paired with the crunchy pecans is the perfect pairing for your morning coffee or tea. With only 5 grams of carbs per serving, this is a great addition to anyone on the keto diet.
It’s one of my favorite treats to make during the holidays, and I love the texture of this homemade Danish pastry. When it comes to easy keto recipes that are always on my mind, it’s safe to say that this one is at the top of the list.
These are best slightly warm right from the oven or reheated in the microwave for a few seconds. The filling reminds me of pecan pie, and I may add a pinch of cinnamon next time I make them. The mozzarella dough I used was inspired by the first mozzarella dough I ever tried. The lovely Cheese Danish from Up Late Anyway. It’s really quite an amazing recipe.

Ingredients
Mozzarella – This is used to make the cheese dough.
Cream cheese – Helps to keep the dough from drying out.
Almond flour – Adds depth and texture to the dough.
Coconut flour – Adds texture to the dough and also a hint of coconut taste.
Ground golden flax – Perfect for adding fiber to the dough.
Joy Filled Eats Sweetener – My favorite sweetener for all my baking needs. A brown sugar sweetener works well in the filling.
Egg – Used to bind together the dry ingredients to form the dough.
Baking powder – Helps make the dough light and airy.
Pecans – You can buy the pecans chopped and ready to save time.
Butter – For the creamy filling of the butter pecan danish.
How To Make a Pecan Danish
Step One: Preheat the oven to 300 degrees.
Step Two: Put the cheese in a microwave-safe bowl and heat for 1 minute. Stir, then heat for 30 seconds. Stir. The cheese should be melted now, but if not, heat for 30 seconds again.
Step Three: Add all of the other dough ingredients and the cheese to a food processor. Mix using the dough blade until it is uniform in color.
Step Four: Once mixed, wet your hands and divide the pastry dough into 12 pieces. Press them onto a parchment-lined baking sheet in 12 circles.
Step Five: Add the ingredients to make the pecan butter into the food processor and process until it is smooth. Divide the mixture out and put it in the circled dough.
Step Six: Fold the edges of the dough as shown and then sprinkle with the rest of the chopped pecans.
Step Seven: Put the pastries in the oven and bake for 20-25 minutes or until they are golden brown.
Helpful Tips
- The easiest way to mix the dough is in a food processor. And then, you can use the food processor to make the pecan butter as well. If you don’t have a food processor, you can mix the cheese dough with a wooden spoon and by hand, it will just take longer.
- I went a little overboard on the filling. I realized after my first try I had to scale it back to ¾ of the amount for this recipe that way your filling doesn’t overflow like mine did.
- I also played around with brushing the Danish with egg whites/ egg wash before the pecans or just sprinkling them on top. The egg white was not needed. The pecans stuck to the dough without it.
Variations
Nuts – You can use any nut in this recipe! Walnuts, almonds, macadamia nuts, pistachios, or an assortment.
Filling – Try adding maple extract if you love the flavor of maple syrup.
Shape of the dough – You can also play around with the shape of these. Make little pizzas, circles, squares, whatever you like! Even make it into one big maple pecan plait and braid it like my Braided Blueberry Cheese Danish.
Add jam to the center of each pastry – If you don’t want to make the nut filling, you can always use a simple fruit filling or even a cream cheese filling. The puff pastry is versatile in what can be added to it. Just remember that whatever you add will change the carb count.
Add different toppings – This sweet treat tastes great with a bit of lemon juice or lemon zest on top. You can also pair this with a few fresh berries, too.
Common Questions
Can I use a different low carb sweetener?
Yes, you can. I love using my own sweetener when I make this low carb pastry, but you can try other types of sweeteners as well.
To use Swerve or Lakanto Monk Fruit, use 1.5 times the amount of sweetener listed on the recipe card. To use Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener.
Do I have to use a hand mixer for this recipe?
To make the fathead dough, a food processor or electric mixer is handy, but you can mix the fat head dough and the rest of the ingredients in a medium bowl using a wooden spoon.

Preheat the oven to 350.

Put cheese in a microwave safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point, all the cheese should be melted. Microwave 30 more seconds until uniform and gloopy (it should look like cheese fondue at this point).

Alternatively, you can melt the cheese in a small saucepan over low heat.

Add the rest of the dough ingredients and the cheese to a food processor. Mix using the dough blade until a uniform color. If you do not have a food processor you can mix in a medium bowl with a wooden spoon but you may need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients. Once it is a uniform color wet your hands, divide the dough into 12 pieces, and press them out into 12 circles on a parchment lined baking sheet.

Put the ingredients for the pecan butter in the food processor and process until smooth. Divide between the circles of dough. Fold up two edges of each circle as shown in the photographs. Sprinkle with remaining chopped pecans.

Bake for 20-25 minutes or until golden brown.
