What I love about this easy recipe is that the cooking process is incredibly simple. Not only does this salmon bites recipe take minutes to prep, but the cooking time is quick and easy as well. Plus – adding the slice of bacon on the outside of the salmon creates the perfect salt contrast.
I make sure to cube the salmon pieces into a good portion size so that everyone who takes a bit gets a good salmon/bacon contrast bite to get all the flavors. Dipping these bites into your favorite BBQ sauce or squeezing fresh lemon juice over the top is also a great way to add extra flavor!

Ingredients
- Salmon – Buy fresh salmon from the market for the best flavor.
- Bacon – Choose any type of bacon that you want.

How to Make Bacon Wrapped Salmon Bites
Preheat the grill to medium-high.
Step One: Cut the salmon into 16 pieces (½ ounce cubes), and then cut the strips of bacon in half. Wrap each ½ strip of bacon around the cubed salmon. Secure with a tooth pick. Season with pepper.
Step Two: Turn off one grill burner and place the salmon on the grill above the burner that is off. Grill for about 8-10 minutes, and as soon as the bacon is crispy and the salmon has an internal temperature of 125 degrees, they’re done. Cooking over indirect heat helps avoid flare-ups from the bacon grease.
Top Tip💡
Use a meat thermometer to check the temperature of the salmon. It’s important to check the internal temperature of the salmon to ensure that it’s cooked all the way. If the reading is 125 degrees, the salmon is fully cooked and ready to be removed from the grill.
Substitutions
- Turkey bacon – To reduce some of the fat content, you can use turkey bacon instead. This swap likely won’t result in crispy bacon, but it will still taste delicious and is a good alternative.
Variations
- Change the seasoning – You can season with your favorite BBQ seasoning, or even drizzle maple syrup over the top of your salmon cubes once they’re cooked. Changing the seasoning is a great option because it changes the flavor of this salmon recipe easily.

Equipment
The only thing that you need is are toothpicks to hold the bacon onto the salmon. I just put the toothpick into the edges of the bacon and that seems to hold it in place.
Storage
If you have a leftover piece of salmon wrapped in a piece of bacon, just let it cool down to room temperature and then store it in an airtight container. You can then reheat it low and slow and enjoy it the next day. I do recommend eating any leftovers within one day of making this dish for the best flavor.
Also, this recipe is meant to be eaten fresh, so freezing isn’t recommended.

You can pair this with cauliflower rice, baked sweet potatoes, or even brown rice. These bacon-wrapped salmon bites would also be super yummy with a simple side salad!
You need to really pay attention to the cooking time of this simple recipe. You can easily cook it for too long and have it overcooked. The biggest way you’ll know if the salmon was cooked too long is if it is chewy and dried out.
Salmon should be tender, moist, and flaky. If it’s hard and dry, that’s a big indicator that it was overcooked. It’s still fine to eat, but it will be a bit on the dry side. Luckily, if this happens, the wrapped bacon will help add a bit of moisture back into the bites.
I really recommend making this dish as fresh as possible, but you could prep the salmon fillet by cutting it into cubes and then cooking it. That would be the easiest way to get this prepped and ready to enjoy.

- 8 oz bacon (8 strips, halved)
- ¼ tsp black pepper
