When I hear a recipe comes from someone’s dad, I immediately need to try it. Chili is one of those recipes. Smash burgers are probably another one.
Dads always seem to have great stories behind their chili recipes: They used the same one for 30 years; they found their recipe in a toolbox at a garage sale; the chili recipe was passed down from their father.
If you want to give your dad a special Father’s Day gift or cook him a great meal, this recipe might just be the thing. As many Allrecipes community members have said, this chili wins contests, so if your dad isn’t already the neighborhood gourmand, this recipe will help him become one.
What is Boilermaker Tailgate Chili?
It’s safe to say this recipe is filled with everything that many dads love: beef chuck, sausage, bacon bits, beer, his favorite corn chips, and lots of peppers, tomatoes, and beans. These are only the core ingredients though. There are so many herbs, spices and seasonings, it’s too many to list out.
Perfect for sports games or block parties, this chili is rich, spicy, savory, and too delicious for its own good. Everyone will be wanting the recipe.
This chili is like a lot of chili recipes in that you can really make the flavors your own. While this recipe is nearly perfect as is, the spice preference of a dish really depends on the person. If you want less spice, reduce the peppers and spicy seasonings. One reviewer even made it vegetarian (we forgive them), so use your imagination and make it your own.
How to Make Boilermaker Tailgate Chili
This recipe has more than 25 ingredients. Don’t let that number deter you from cooking this though. More ingredients doesn’t always mean more flavor, but in this instance, it does. Plus, this recipe only takes about 30 minutes to prepare, and since it’s chili, it’s fairly simple to cook. Once all the ingredients are in the pot, it stews for about 2 hours, developing more and more flavor as it cooks.
The only ingredient that needs its time alone in the pot is the ground beef chuck and Italian sausage. These ingredients will go in your stock part first and cook until brown. The chili will have a delicious flavor as a result, but make sure to drain off any excess grease.
This is a great recipe to make in a slow cooker as well. Since a slow cooker likely won’t get hot enough to brown beef and sausage, cook these two in a separate pan and transfer to your slow cooker.
Once your chili finishes and you portion into bowls, top with plenty of corn chips and Cheddar cheese.
