- Chicken – You can have it shredded or cubed.
- Frozen cauliflower – Cook it in the microwave before using.
- Shredded cheddar cheese – Freshly grated cheese has the best flavor.
- Crispy bacon – You can buy it already cooked or cook it yourself and crumble it.
- Chopped green onions – Adds a nice texture.
- Cream cheese – This is used to make the sauce.
- Sour cream– Thins out the sauce a bit.
- Mayonnaise – Adds texture and taste.
- Heavy cream or half and half – Either option is fine to thin the sauce.
- Salt – Salt enhances the other flavors. You can add it to taste.
- Garlic powder – For taste.
- Onion powder – For taste.

How to Make Keto Chicken Cauliflower Casserole
Preheat the oven to 400 degrees. Prepare a 9×13 baking dish with cooking spray.
Step One: Roast the cauliflower. Let cool for a few minutes.
Step Two: Mix the sauce ingredients together in a mixing bowl. You can season the sauce to taste.
Step Three: Fold in the cooked chicken and roasted cauliflower. Stir in ½ the cheese, ½ the bacon, and ½ the onions.
Step Four: Spoon onto the dish. Spread it evenly.
Step Five: Top with the rest of the cheese, bacon, and onions.
Step Six: Bake for 30 minutes at 400 degrees until bubbly.

Substitutions
- Head of cauliflower – If you want to cut your own cauliflower, you can. I just use the frozen options that are already done and ready to save on time. If you want to make your own cauliflower rice, go for it! It’s a fun way to change the texture!
- Shredded cheese – Any type of cheese will work for this creamy chicken casserole so have fun with flavors. You can add lots of cheese, or a little – up to you.
Variations
- Spicy – Adding chili powder or cayenne pepper to this creamy cheese sauce can be a simple way to add a kick of heat.
- Buffalo – Add in some buffalo sauce to make a buffalo chicken cauliflower casserole!
- Chicken broth – To thin out the creamy sauce, a little bit of chicken broth can be used.

Lefotvesr of this keto cauliflower casserole needs to be stored in an airtight container and kept in the fridge. It can be stored for 3-4 days. When you are ready to eat, reheat a serving of the cauliflower casserole in the microwave.

You can. I use bigger pieces of cauliflower because I like the texture. And I just like to use the frozen kind as it cuts down on the prep time needed to make this dish.
But you can also use riced cauliflower, too! Options are good!
To stick to the ketogenic diet, pair this with a side salad or even a side dish of fresh fruit. Even though the casserole is low in carbs, it doesn’t mean that it’s not hearty! Having a light side dish or dessert to follow is a great way to round out the meal.
You can. Just be sure to let the chicken thaw completely, and then drain any excess liquid from it before using it. I always have frozen shredded chicken in my freezer for recipes just like this!

- 4 cups chicken cooked & shredded or cubed
- 12 oz frozen cauliflower microwaved or steamed until warm and well drained
- 1.5 cup shredded cheddar cheese divided
- 1 cup bacon crumbles divided
- ½ cup chopped green onions divided
Sauce
- 4 ounces cream cheese softened
- ½ cup sour cream softened
- ½ cup mayo
- ¼ cup heavy cream or half and half
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions

Preheat oven to 400. Spray a 9×13 baking dish with cooking spray.
