While it might seem like all the grocery stores and candy brands are telling us summer is over and it’s time for Halloween, we here at Allrecipes are still squeezing in the last bits of fresh, bright flavors wherever we can before we dig out our chili pots and baking dishes to welcome fall. When we asked our team of editors what they’d be making this month, we all agreed we’d be celebrating tomatoes. And what better way than in gazpacho? Some prefer the blended Spanish version, while others love that this recipe from Chef John is a mix of blended and chopped produce. Either way, this chilled, no-cook soup combines all the flavors of summer into one bountiful bowl.
Panzanella Salad
The other tomato-centric dish that we’re all rallying around is panzanella, an easy-to-make salad with fresh veggies and toasted or stale bread. While there are many seasonal versions to try, including one with grilled peaches, the simplicity of tomato, basil, mozzarella, and a few other add-ins, is a recipe for success.

One of our favorite ways to bridge the gap between summer and cozy fall meals is with dishes like this. With chicken, baby spinach, and grape tomatoes, you’ll have a complete dinner ready in half an hour.” Not only does this dish feature fresh produce, but it’s a cozy yet light dish perfect for any summer evening. You can bulk it up with veggies of your choice or swap the chicken for shrimp. We’ll be making this on repeat.
Greek Turkey Meatballs
Serve these light yet full-of-flavor meatballs with pita, salad, and dips like hummus and tzatziki, and dinner is served. The easy Greek-inspired meal is perfect to enjoy al fresco any night of the week.
