This ‘Game-Changing’ Blender Dip Has Only 4 Ingredients

It’s been a pickle-packed summer in the food world. From spicy pickle Goldfish to pickle-flavored cupcakes, we’ve been discovering brand new ways to embrace the pickle’s signature salty, tangy flavor. 

Of course, we’re also entering the height of our dip-loving days. When it’s so hot outside, the only thing we want to bring to a potluck is a no-cook, low-effort app that’s easily completed with a side of chips. So, it’s only natural that when we saw a simple blender dip featuring the ingredient of the hour (pickles), we immediately added to our recipe files.

By now, we’ve all heard of pickle de gallo. Whether you’ve had the store-bought version or whipped it up on your own, you know that pickles add the tastiest tang to a traditional salsa. So, what happens when you add that bold, briny flavor to another favorite four-ingredient dip? It takes snacking up a notch. 

Let us introduce you to another brilliant new way to make pickles the star of your appetizer table: Pickle Verde. It’s the dip pickle fans will flock to, and best of all, it couldn’t be easier to make.

This recipe comes from Instagram creator @thesassybarn, a certified pickle lover (Grillo’s, in particular) who has developed many delicious pickle creations, ranging from pickle pasta salad to pickle margaritas. Needless to say, we’re big fans of her work. 

Her recipe combines pickles, jalapeños, garlic cloves, and dill into a bright and refreshing summer dip in seconds. It has so much flavor with so few ingredients, and it’ll surprise every guest who tries it.

This stand-out salsa comes together entirely in the blender and can be stored in your fridge all day until you’re ready to serve. While it’s perfect as a dip with chips, you can also use it to top tacos, burgers, and chicken bakes—anything you’d pair with a traditional salsa verde. Personally, we’ll be spreading it on everything imaginable.

How to Make Pickle Verde

To make this viral pickle verde, combine one jar of dill pickles, a teaspoon of dried dill, two cloves of garlic, one jalapeño (with the seeds removed), and a few splashes of pickle juice in a blender, adding more pickle juice as needed.

For a chunkier dip, pulse the blender just a few times. For a smoother consistency, blend longer. You can also mix in chopped pickles after blending for an added crunch. The dip is ready to eat right away, but allowing it to chill in the fridge for a few hours will help the flavors meld together better and enhance the overall taste. Pair it with tortilla chips or serve it as a savory side sauce your guests will never expect, but undoubtedly love.
