How to Make Low Carb Bacon Cheeseburger Soup

This lazy low carb hamburger soup with cream cheese and bacon is very easy to make.

Start by adding olive oil to a heavy pot. Add the garlic and onion and cook until soft. 

Then add ground beef and cook until the meat is brown. Season with salt and pepper.

Add mustard and cumin. Saute for one minute and then stir in the cream cheese.

When the cheese melts, add the pickles, tomato puree, and beef broth. Stir. 

Bring the soup to a boil and then simmer for 25 to 30 minutes.

Turn the heat off and stir in the cheddar cheese, stirring constantly until well incorporated.

  • Bring to a boil then reduce the heat to low, cover with a lid, and let simmer for 25-30 minutes.

  • Turn the heat off. Add shredded cheddar gradually to the pot, stirring constantly, and continue to stir until melted.

  • Ladle into bowls and top with a spoonful of sour cream, bacon pieces, cheddar cheese and chopped parsley. Serve hot.

How to Make Instant Pot Keto Cheeseburger Soup

You can use my recipe above to make the soup using an Instant Pot instead of the stove. Here’s how:

  1. Turn on the Instant Pot and select the “Sauté” function. Add olive oil, followed by onion and garlic. Sauté until fragrant.
