I always thought these were the most beautiful cookies and you can buy them in stunning boxes at the Paris airport.

My mission was to make a keto macaroon without almond flour and I finally created a perfect recipe for all of you!

HOW TO MAKE KETO FRENCH MACARONS

To make my peanut butter & jelly macarons, instead of almond meal, I used Equip prime protein. I like to have nut free recipes for my clients.

TIPS ON MAKING KETO FRENCH MACARONS

  1. Use Room Temperature Eggs
  2. Do not allow any water to touch the whites: make sure your bowl is dry, the spatula is dry and the hand mixer is dry.
  3. Do not spray the parchment with fat. Place the cookie batter on dry parchment. Spray will cause the cookies to fall.
  4. Use erythritol instead of allulose. Allulose will work BUT they are very sticky.

  • Preheat the oven to 225 degrees F. Line a large baking sheet with parchment paper.

  • Place the egg whites and cream of tartar in a large bowl and use a hand mixer on high until soft peaks form. 

  • Add the powdered sweetener and Equip. Mix on high until stiff peaks form. 

  • Place the mixture into a piping bag with a star point tip attached (or large Ziplock and cut a small 1/4 inch hole in one corner). 

  • Pipe out rounded tablespoon sized cookies spaced 1/2 inch apart onto the prepared baking sheet. 

  • Bake for 35 minutes. Remove from oven and cool before filling.

ASSEMBLY:

  • Place one tablespoon of the filling onto the inside edge of one cookie. Top with another cookie. Repeat with remaining filling and cookies.

  • Store extras in an airtight container in the fridge for 7 days.
