  • Boneless skinless chicken thighs – The star of this keto honey mustard chicken thighs recipe. 
  • Salt – For flavor. 
  • Dijon mustard – This is needed for the creamy dijon sauce.

How to Make Keto Mustard Chicken

Preheat the oven to 350 degrees.

Step One: ​Spray cooking spray into the casserole dish. Add the chicken thighs and sprinkle salt on the chicken.

Step Two: Mix all the other ingredients together and then pour them over the chicken. 

Put the dish in the oven to bake for 40 minutes. Baste the chicken with the sauce and then bake for another 20 minutes. 

Top Tip💡

Don’t worry about overcooking the chicken. Dark meat will just get more tender as it cooks!

Substitutions

  • Chicken breasts – You can use white meat in place of dark meat for this creamy mustard chicken recipe. 
  • Yellow mustard – This can be a good substitute if you don’t have Dijon.

  • Fresh herbs – You can add other simple ingredients like fresh thyme, fresh parsley, or even black pepper, garlic powder, or other seasonings.

What are good side dishes for a low carb diet? 

​I’d pair this dish with a fresh green salad or cauliflower mash. Steamed broccoli or roasted vegetables are also great options and pair really well with the tangy Dijon mustard. 

Can I make this in a cast iron skillet? 

I’ve only ever made this in the oven. I think that using a skillet to make this dish would be hard because the oven allows the sauce ingredients and chicken to marinate perfectly without overcooking. Using a casserole dish, adding the ingredients, and baking is a great way to make a one-pan meal without having to stand over the stovetop, watching it.

Do I have to use boneless chicken thighs? 

For me and my whole family, it’s just easier. That way, once it’s done cooking, we can eat and enjoy. I don’t want to worry about bones or anything like that, so it makes sense to use boneless. 

If all you have is chicken thighs that are not boneless, they can still be used, but caution should be taken when eating. Regardless of the cut of chicken used for this complete meal, be sure that the internal temperature is at least 165 degrees for safe consumption.

  • Preheat oven to 350.

  • Spray a casserole dish with cooking spray. Put the chicken thighs in the dish. Sprinkle the salt on the chicken.

  • Mix together all the other ingredients. Pour over the chicken.

  • Bake for 40 minutes. Baste the chicken with the sauce. Bake for another 20 minutes.

  • Don’t worry about overcooking the chicken. Dark meat will just get more tender and the sauce will thicken. My chicken hit 160 degrees around the 30 minute mark but the sauce was still thin. After an hour it was perfect.
