Bacon – You can use any type, thickness, and flavor of bacon for this recipe.
Cheddar Cheese – This cheese is excellent as it holds texture while still being melty.

How to Make Bacon Wrapped Stuffed Chicken Thighs
Preheat the oven to 400 degrees.
Step One: Wrap each chicken thigh around a piece of cheddar. You can add your favorite dry rub in this step.
Step Two: Wrap the chicken tightly in a piece of bacon.
Step Three: Be sure to stretch the bacon around the chicken. Place it on a baking sheet for 35-45 minutes until the bacon is crispy and the chicken is cooked all the way.
Step Four: Any cheese that oozes out can be spooned on top.

Use a meat thermometer to check the temperature of the chicken. The last thing you are going to want to do is overbake it. Trust me on this! It will get dried out. Instead, check the temperature until it reaches 158 degrees then you can pull it out of the oven. It will continue rising to reach 160.
Substitutions
- Cheese – You can use cheddar cheese, pepper jack cheese, feta cheese, and even a little bit of goat cheese as your choice. Since the stuffing mixture is all cheese for this tender chicken, you can mix and match and create the perfect option.
- Bacon slices – Thick cut bacon does really well for this dish as it’s strong and holds together better. For a healthier version, you could use turkey bacon as an option. Just know that since turkey bacon is lower in fat content, it won’t be releasing any bacon grease into the bacon-wrapped chicken thighs as they are cooking.
